Cocoa Brownies with Chocolate Glaze

In the episode

Kevin greased the pan with a little butter (no cooking spray on hand) to avoid sticky brownies, then stirred cocoa powder, "from the Ghirardelli dealers right in Dalaran," into the melted butter. Sugar, two eggs and vanilla came next, then the dry ingredients and the flour we'd forgotten to set out. Partway through he swapped the plastic mixer for a wooden spoon, and we discovered we'd messed up the lighting. Friendly reminder: don't drink too much Kungaloosh while filming.

Then came a glaze that Khadgar himself would be proud of. Butter, cocoa, milk and then sugar looked like it wouldn't work, but it came together into a glossy glaze. A plastic knife stood in for a cake tester.

Verdict: very chocolatey, with a sweet-salty finish that followed the stew nicely, and the cinnamon on top blended right in. Our honest note: "more cakey than brownie." We'd have liked them more fudgy, but they were still delicious.

Prepare to indulge in this delectable treat, best enjoyed seated to fully appreciate each gooey, decadent bite. With a luscious chocolate glaze and a dusting of cocoa and spice, these brownies reign supreme.

Just remember, sharing is caring, so be sure to bring enough to go around!

Ingredients

Brownies

  • 1/2 cup butter, melted, plus a little for the pan
  • 1/3 cup unsweetened cocoa powder
  • 3/4 cup granulated sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 pinch salt
  • 3/4 tsp baking powder
  • 1/2 cup all-purpose flour

Chocolate glaze

  • 3 tbsp butter
  • 1/3 cup unsweetened cocoa powder
  • 2 tbsp milk
  • 1 cup confectioners' sugar

For dusting

  • 1 tbsp cocoa powder
  • 1 tbsp ground cinnamon

Instructions

Bake the brownies

  1. Heat the oven to 350°F. Rub an 8 x 8-inch pan with a light coat of butter.

  2. Stir the cocoa into the melted butter until well mixed. Stir in the sugar, then the eggs, then the vanilla.

  3. Add the salt, baking powder and flour and stir with a wooden spoon until just combined.

  4. Spread the batter evenly in the pan and bake for 25 to 30 minutes, until a tester in the center comes out clean. Let cool.

Glaze and serve

  1. Melt the butter in a small saucepan. Stir in the cocoa, then the milk, stirring hard until smooth. Add the confectioners' sugar and stir until glossy.

  2. Spread the glaze over the brownies, dust with the mixed cocoa and cinnamon, and cut into squares.

Notes

Ours came out more cakey than fudgy. For a fudgier brownie, cut the baking powder back to 1/4 teaspoon. The glaze looks like it won't come together until the sugar goes in, so keep stirring. No cake tester? A plastic knife works. Best with a glass of ice-cold milk.
