Join us as we venture into the realm of crunchy “lichen” crispsโ€”nutritious snacks once peddled by Undercity’s undead but now easily recreated in the comfort of your own kitchen. With just a dash of sweetness, these crispy delights are a delicious way to savor your daily greens while embarking on a quest of flavor exploration. Ingredients:

Firecracker Salmon:

Place all the ingredients in a Ziploc bag, ensuring the salmon is fully coated, then let it marinate for a minimum of one hour, or for maximum flavor, overnight in the refrigerator. While the salmon marinates, prepare a small edged baking sheet by lining it with aluminum foil. When ready to cook, preheat the oven to a high broil setting. Arrange the salmon, skin side down, on the foil-lined sheet. Slide it under the broiler and cook for 5 to 10 minutes, adjusting the cooking time based on the thickness of the fillets. Once the fish easily flakes with a fork and achieves a delicate pale pink hue, it’s ready to be served hot off the oven. Enjoy immediately!

  • Two 4-ounce salmon fillets
  • 1/4 cup sesame or vegetable oil
  • 2 tablespoons soy sauce
  • 2 tablespoons balsamic vinegar
  • 2 teaspoons brown sugar
  • 1/2 teaspoon Sriracha sauce
  • 1/2 teaspoon Northern Spices

In a medium bowl, mix together the honey, olive oil, and spices until well combined. Add the kale to the bowl, tossing gently to coat each leaf thoroughly. Shake off any excess marinade before arranging the kale on the prepared baking sheet, ensuring minimal overlap between pieces. Bake for approximately 50 minutes, flipping the kale halfway through cooking, until the pieces are crispy and golden.
