Carrot Casserole with Cereal Crumble

With Jeremiah still missing, Kevin boiled the carrots for about 40 minutes off camera (you didn't need to see that) and mashed them with sugar, salt, maple syrup and butter, then stirred in coconut milk.

Our 200-year-old blender came out one more time for the crumble: brown sugar, Sugar Bombs, salt, candied ginger and walnuts, then two more tablespoons of butter. With only a few ingredients, it finally behaved.

Kevin expected a sugar overload, but the butter and salt balance it out, and a quick broil gave the top a real crunch. His verdict: "That is so, so good." Even better news: Jeremiah escaped.

Let's not forget about those picky little vault-dwellers. Getting them to eat their veggies was always a battle until Sugar-Bombed Carrots came to the rescue!

Sugar-Bombed Carrots

Sweet mashed carrots with maple and coconut milk under a crunchy Sugar Bombs cereal, walnut and candied ginger crumble. Even picky vault kids eat their veggies.

Ingredients

Mashed carrots

  • 2 lb carrots, peeled and sliced
  • 1/4 cup sugar
  • 1 tbsp maple syrup
  • 2 tbsp unsalted butter
  • 1 tsp salt
  • 1/3 cup coconut milk

Crumble topping

  • 1/4 cup brown sugar
  • 2/3 cup Sugar Bombs cereal, or other sugar-frosted flake cereal
  • 1/4 cup walnuts, chopped
  • 2 tbsp unsalted butter
  • 1 tsp salt
  • 2 tbsp candied ginger, diced

Instructions

  1. Heat the oven to 350°F. Boil the carrots for about 40 minutes, until very soft. Drain.

  2. Mash the carrots with the sugar, maple syrup, 2 tablespoons of butter and 1 teaspoon of salt.

  3. Stir in the coconut milk and spread the mash evenly in a 9 x 12-inch baking dish.

  4. Pulse the brown sugar, cereal, remaining salt, candied ginger and walnuts in a food processor.

  5. Add the remaining 2 tablespoons of butter and pulse again into a crumble. Scatter it evenly over the carrots.

  6. Bake for 30 minutes, then broil for a few minutes until the topping is crunchy. Watch it closely under the broiler.
