Our secret to crispy tato fries is a 15 to 20 minute soak in very warm water, then a thorough pat-down, because nobody wants wet fries. We didn't skimp on the olive oil, then hit them with salt, pepper, garlic powder, paprika, a little thyme and a heavy dose of Italian seasoning.

The real star was the cooker: a pre-war air fryer we found and kept quiet about by slipping Paladin Danse a couple hundred caps. Twenty minutes at 400 and they came out golden and crunchy while we played with our Vault-Tec bobblehead.

At the table we dunked them in marinara, since tatos are canonically potato and tomato grown together. The verdict: "delicious, very good."

Make sure to dip these in ketchup or tomato sauce for lore-accurate tatos.

Crispy seasoned air fryer fries with paprika, Italian seasoning and garlic. Dip them in ketchup for lore-accurate tatos.

Ingredients

  • 5 potatoes
  • olive oil, a generous drizzle
  • salt, to taste
  • pepper, to taste
  • garlic powder, a pinch, or until your ancestors say stop
  • paprika, a pinch
  • dried thyme, a pinch
  • Italian seasoning, a generous shake
  • ketchup or marinara, for dipping

Instructions

  1. Slice the potatoes into fries and soak them in very warm water for 15 to 20 minutes.

  2. Drain the fries, spread them out on paper towels and pat them completely dry.

  3. Toss the fries in a bowl with plenty of olive oil, then the salt, pepper, garlic powder, paprika and thyme.

  4. Finish with a generous shake of Italian seasoning and toss again.

  5. Load the fries into the air fryer basket and shake it so they sit evenly.

  6. Air fry at 400°F for 20 minutes, until golden and crispy.

  7. Serve with ketchup or marinara for dipping.
