Jeremiah kicked off our BlamCo build with what he called the step every normal mac and cheese starts with: boiling carrots. Fifteen minutes later they went into the blender with milk, cream and Worcestershire, and the cream nearly turned into butter before it made it in.
Then came the official melt-the-butter dance, a roux spiked with cayenne, garlic and whole-grain mustard, and the carrot milk whisked in. There's not even cheese in it yet, and it already tastes like mac and cheese. Cubes of cheddar and fontina went in a little at a time, the way daddy BlamCo would make it, before a pound of noodles got drowned.
At the taste test we both went for the mac first and didn't look back. one of us declared this is how we make mac and cheese from now on, and it tastes just like pre-war BlamCo. Say what you will about pre-war companies, they knew how to preserve food.

Cheddar Fontina Mac and Cheese
BlamCo Mac and Cheese
Creamy, bright-orange stovetop mac and cheese made with sharp cheddar, fontina and a secret blended-carrot sauce, the wasteland's favorite boxed dinner made real.

Carrot cream
2mediumcarrots, chopped
1 1/2cupswhole milk
1/2cupheavy cream
2tspWorcestershire sauce
Cheese sauce
1/4cupall-purpose flour
2tspwhole-grain mustard
2tspgarlic powder, or until your ancestors say stop
1/4tspcayenne pepper
5tbspunsalted butter
8ozsharp cheddar, cubed or shredded
4ozfontina, cubed or shredded
salt and pepper, to taste
To finish
1lbelbow macaroni, cooked and drained
Instructions
Simmer the carrots in a pot of water for about 15 minutes, until a fork slides through easily. Drain.
Blend the hot carrots with the milk, cream and Worcestershire sauce until completely smooth. This carrot milk gives the sauce its boxed-mac orange color.
Melt the butter in the same pan over medium heat.
Stir in the cayenne, garlic powder and whole-grain mustard so the spices bloom in the butter.
Whisk in the flour and cook for about a minute to make a roux.
Slowly whisk in the carrot milk and cook until it thickens into a smooth sauce.
Add the cheddar and fontina a little at a time, stirring until each batch melts. Season with salt and pepper.
Pour the cheese sauce over the cooked macaroni and stir until every piece is coated. Serve hot.
