The book calls for Granny Smiths, but we liked the colors and flavors of different apples, so we used a mix. The batter was flour, cornstarch, baking powder, sugar and half a cup of fizzy cider ("we decided to go the alcoholic route"). The recipe says to dip the slices one at a time, but we did them all at once. Half of them hit the floor, which was fine because we'd bought too many apples. They fried at about 350°F for roughly a minute and a half per side.
Then our microphone died, so the honey caramel narration was dubbed later in the studio: honey, sugar and cream brought up to 240°F, then butter and our Ancient Pandaren Spices.
The table went wild. We couldn't stop eating them off screen, and both of us called it the best dessert we've ever made on the channel: "the sauce is perfect." It's like apple pie with a totally different flavor, thanks to how complex the Ancient Pandaren Spices are.

Pomfruit Slices
A mix of apple slices dipped in a fizzy-cider batter, fried golden and puffed, then drizzled with a honey caramel spiced with Ancient Pandaren Spices.
Heat about 1 inch of vegetable oil in a deep pan to 350°F.
Whisk the flour, cornstarch, baking powder, sugar and cider into a smooth, wet batter.
Add the apple slices to the batter and toss until they're all lightly coated.
Fry in batches of 5 to 10 so the pan isn't crowded, lowering them in gently, for about 1 1/2 minutes per side, until golden. Drain on paper towels.
Cook the honey, sugar and cream in a saucepan, stirring, until it reaches 240°F.
Take it off the heat and stir in the butter and the Ancient Pandaren Spices. If the caramel separates, whisk in a splash of boiling water.
Arrange the apples on a plate and drizzle with the warm caramel, or serve it on the side for dunking.
Serves 2 to 4. A mix of apples gives you more color and flavor; Granny Smiths alone give the sweet-and-sour balance of pomfruit. We used hard (alcoholic) cider in the batter. Pairs well with hot apple cider.
